Light Leil??? Bars – Goldene Bodily

Typed but the typing is all run together.  Kind of makes me wonder if she didn’t type this while it was dictated to her over the phone.  Clean, slightly yellowed.  As always, typos and spelling are 100% Grandma. 

1/2 c butter

1/2 t soda

1 1/2 c sugar

1 13 oz can crushed drained pineapple

4 eggs

1/2 c cocoanut

1 t salt

1/2 c nuts

In large mixing bowl cream butter and sugar

Add eggs, mix well.  Blen in flour, salt and soda.  Stir in drained pineapple and cocoanut.

Spread into greased 15 x 10 jelly roll pan.

Bake 350 20-25 min.  Cool, cut inot bars.  Bars may be rolled in powdered sugar.

Lemon Bars – Clo Crookston

Typed card, very clean.  Not Grandma’s regular typeface so she may not have typed it up at least not at home. 

1 c butter

salt

2 c flour

1/2 c powdered sugar

Mix and press into buttered 9 x 13 pan bake 350 15 min.  Cool

Filling

4 eggs beaten

2 c sugar

1/4 c flour

6 T lemon juice

Mix together and pour on slightly cooled crust bake 350 25 min or until set

When cool sprinkle with powdered sugar

Lemon Bars

Slightly yellowed, very clean card.  Don’t think Grandma typed this one up. 

1 Pkg (17 oz) lemon cake mix

1/2 cup melted butter

1 egg slightly beaten

1 pkg (13 1/2 oz) lemon frosting mix

1 pkg cream cheese

2 eggs

Combine cake mix, butter, and beaten egg.  Mix with fork until moist.  Put in 13/9″ pan – grease bottom only.  Blen frosting mix into cream cheese.  Add 2 eggs.  Beat 3 to 5 minutes.  Spread over cake mixture.

Bake 350 for 30 to 40 minutes

Sprinkle with powdered sugar and cut into bars while still warm.  Allow to cool overnight, otherwise you’ll be disappointed.

Lemon Squares – double recipe for cake pan (Chantal)

Chantal strikes again.  Decorative recipe card, hand written in black ink.  Definitely Grandma’s handwriting but card has only a few spots here and there. 

1 C flour

1/2 C margarine

1/2 C powdered sugar

1 C sugar

1/2 t baking powder

1/4 t salt

2 T lemon juice

2 eggs

Cream powdered sugar margarine & flour

Press in 8 x 8 pan.  Bake 350  20 min

Beat remaining ingredients until light & fluffy (just before cake comes out)  Pour over hot crust – Return to oven for 25 minutes.

Brownies

Handwritten in pencil, lined card, yellowed.  Very clean. 

1/2 c butter

1/2 c flour

1 c sugar

1 c nuts

2 eggs

2 sq. chocolate

1 t vanilla

Bake 20 min.

Cut in squares after taking from oven.

Peanut Butter-Choc bars (Chantal)

Handwritten in pencil – I think it might have been written by Chantal with Grandma writing Chantal’s name next to the title.  Chantal being Chantal Budge Cobia of course.  This is also in the wrong place and I’m not sure what to make of that. 

In a medium saucepan melt:  1 C margarine

When melted, remove from heat & stir well; 1/14 C peanut butter, 4 C powdered sugar (should be smooth)

Press into ungreased 9×13 pan & refrigerate for 2 hours

Melt one bag chocolate chips & pour over cold peanut butter mixture.  Cut into squares immediately.
