Strawberry Angel Cake

This is something cut out of the paper and pasted on to the recipe card. Very clean, no hand writing.

Whether you bake or buy your angelfood, this dessert is sure to plesae; Slice 2 pints strawberries; toss with 1 tablespoon each of granulated sugar and orange juice. In another bowl, beat until creamy: 2 cups nonfat plain yogurt, 1/4 cup “light” cream cheese, 1 teaspoon each of orange juice and vanilla, 3 tablespoons orange zest.

Cut 8 slices of angel-food cake. Top each with strawberries and a dollop of yogurt suace; garnes with fresh mint.

Serves 8. Per service: 213 calories, 2 g fat, 3mg cholesterol.

Card is yellowed and stained and there’s an S &W green stamp stuck to the back.

2C graham cracker crumbs

1/2 c sugar

1 C melted margarine

mix – press 9×12 pan

Cream 8 oz cream cheese, 1/2 c pwd sugar add 2 pkg dream whip beaten as directed layer over graham cracker crust.

Top cherry filling – garnish whip cream

Serves 12 to 16 people.

Banana Cake Rooll (Annie Nye)

4 eggs

1/2 t vanilla

1 t baking powder

1 pkg lo=cal banana pudding prepared

10 T granulated sugar replacemnt

2/3 c cake flour

1/4 t salt

Chocolate Drizzle

Beat egg yolks until thick. beat in 3 T sugar replaceme

Add vanilla. Beat egg whites to soft peaks Fold in yolks

Sift flour, baking lpowder salt Fold into egg mixture

Spread in pan 10 1/2 x 1 in (jelly roll pan)

Bake 375 10-15 min. Turn on towel sprinkled with flour and sugar replacemnt. Roll up cake. Cool

Spread with prepared banana pudding. Drizzle with chocolate.

Lemon Jello Cake (Zelliah Butcher)

Card is quite yellowed with minimal staining.

1 pkg yellow cake mix

1 lemon rind grated

4eggs

1 pkg lemmon jello

3/4 c water

3/4 c salad oil

Bake in oblong pan about 35 minutes at 350

Topping

2 c powdered sugar

Juice of 2 lemons

perforate cake with fork while warm and pour on topping. Put back in oven for 10 minutes. Good plain or with whipped cream.

Earthquake Cake

Card is fairly un-yellowed. It is hand written in ink, hand is very light and a little shaky. My guess is it was something Grandma came across later. No attribution though.

9 x 13 cake pan

1 cup coconut

1 c nuts

put on bottom (pretty sure that’s bottom of the aforementioned pan)

1 pkg chocolate cake mix & mix according to directions & put over coconut & nuts

Mix 3 c powdered sugar

1 cube margarine

8 oz cream cheese

Spoon & swirl over top of ocake do not mix in.

350

Lazy Daisy Oatmeal Cake (Magazine)

This looks older, types, no idea what magazine. As always, spelling is Grandma’s.

1 1/4 c boiling water

1 c Oats

1/2 c margarin

1 c sugar

1 c brown sugar

1 t branilla

2 eggs

1 1/2 c sifted flour.

1 t soda

1/2 t salt

3/4 t cinnamon

1/4 t nutmeg

Pour boiling water over oats: cover and let stand 20 min. Beat butter until creamy; gradually add sugars and beat until fluffy. Blend in vanilla and eggs. Add oats. Mix. Pour batter into well-greased and floured 9 inch square pan. Bake 350 for 50 to 55 minutes.

Frosting

1/4 c margarine melted

1/2 c brown sugar

3 T half and half

1/3 c chopped nutmeats

3/4 c coconut

For frosting, combine all ingredients. Spread evenly over cake. Broil until frosting becomes bubbly. Cake may be served warm or cold.

Eggless-Butterless-Milkless Cake (Chantal)

Can’t imagine Grandma knew more than one Chantal and if she did, I imagine she’d have said so we’re going to go with – this recipe is from my cousin, Chantal Budge Cobia. I also think Chantal wrote this, not Grandma. It’s the “Yummy!” at the end. Totally not Grandma, but I could see Chantal doing that. A good entry to come after Alain.

Combine & boil for 10 min:

3 cups water

2 3/4 c raisins

2 c sugar

1 c. shortening

Allow to cool.

Sift together & stir into raisin mixture:

4 C flour

1/4 C carob powder (or cocoa)

2 tsp soda

1 tsp salt

1 1/2 tsp cinnamon

1 1/2 tsp. nutmeg

1/2 tsp allspice

1/2 C chopped nuts (optional)

Pour into 2 greased round cake pans or 9 x 13 cake pan.

Bake at 350 for 30-35 min.

Yummy!

Gone to Grandma’s house

Last Friday, Grandma got one of her “kids” – my cousin Alain died in an accident. I’m sure she welcomed him with open arms, and that she fussed over him and then at him for getting there too soon and by now, she’s put him to work at something or other – because we all know Grandma’s busy.

So Alain has gone to Grandma’s house and he won’t be back. About now he’s probably out in the workshop with Grandpa until it’s time for dinner, when Grandma will tell him he looks hungry and feed him rolls and pie – which he won’t have to share with anybody but Grandpa.

Have a hot buttered roll for me Alain.

Chocolate Bar Bundt (Carolyn Stimpson)

Hand written in ink, very lightly, pretty neat too. As always, spelling and capitalization ar Grandma’s.

Greased & floured Bundt pan

60 min 350

1 lg 8 oz hershey bar melt over double boiler

1 5 oz hershey chocolate syrup

Cream til light fluffy

1 c Butter

1 3/4 c sugar

4 eggs (1 at a time)

1 teas van

Add fold in

2 1/2 c flour

1/2 teas salt

Add together then to mixture

1 c Buttermilk

3/4 teas soda

After finished baking cool 10 min – turn onto plate

Sprinkle with Pwd sugar on top cake

Handwritten. Grandma’s written “real good” at the top and circled it! Card is lined, minor staining. Must be more recent as she doesn’t capitalize baking powder.

4 eggs seperated

3/4 c sugar

1/2 t vanilla

1 t baking powder

1/4 t salt

1/4 c margarine

1 oz chocolate melted

1/2 t vanilla

3 c sugar

3 T milk

chopped nuts

confectioners sugar

strawberry preserves

Beat egg yolks until thick – gradually beat in 1/4 c sugar & vanilla.

Beat egg whites until soft peaks gradually add 1/2 c sugar

Beat until stiff peaks form. Fold yolks into whites – fold combined dry ingredients into egg mixture – spread evenly into greased pan.

Bake 375 12-15 mins

Turn out on cloth sprinkle with confectioners sugar. Spread with preserves.

Cream margarine; blend in chocolate & vanilla. Add sugar & milk alternately beat light & fluffy. Frost log. Run tines of fork across frosting to resemble a log.
