Tuna Spread

This recipe is on a card with 3 other recipes and part of a rhubarb pie recipe.  No idea where the rest of the pie recipe is. 
6 1/2 oz can tuna
2 T onion
2 T celery
1 T carrot (finely chopped)
1/4 c lo-cal blue cheese dressing

1 cup diced potatoes
1 cup diced celery
1 cup diced onions
1 cup diced green pepper
1 cup diced leek
3/4 cup chopped clams
3/4 tbsp. ground black pepper
1 1/2 tbsp. salt
3/4 tbsp. whole thyme
6 bay leaves
1 tsp tabasco
3/4 cup sherry
2 cups water
3/4 cup clam juice

Stir Fried Catfish
4 farm raised catfish fillets
3T. lemon juice
3T. soy sauce
3T. vegetable oil
1C. thinly sliced red pepper
1C. sliced celery
1C. snow peas
1C sliced fresh mushrooms
2T cornstarch
3/4C water
1t. salt
1/2t. pepper
Hot cooked rice
