Fred Wix Gabby Gourmet – Herbed Shrimp and Mushrooms

From the kitchen of Fred Wix, as heard on the KUTV NEWS ant Noon.

3 lbs Med.-Large Shrimp, boiled, peeled, and veined

2 lbs Whole Fresh Mushrooms

2 Bermuda Onions, halved and thinly sliced

1/2 Fresh Lemon, thinly sliced

2-4 Cloves of Galric, crushed

10 Whole Bay Leaves

1/2 Cup Fresh Parsley, chopped

1-1/4 Cups Olive and Light Vegetables Oil (half each)

1-1/4 Cups Herbed White Wine Vinegar

Juice from 1 Lemon

2 Tbsp. Sugar or Substitute

2 Tbsp. Whole Allspice Balls

1-1/2 Tbsp. Fennel Seeds, crush

1 tsp. Thyme

1 tsp. Sweet Basicl (can use 3 Tbsp. of fresh basil)

1/2 tsp. Tarragon

Red Leaf Lettuce Leaves

Prepare all of the ingredients as indicated.  In a large mixing bowl or serving bowl, combine the first 7 ingredients and mix lightly, but well.  In a large measuring-type bowl, combine the oil, vinegar, and lemon juice, then add all of the remaining ingredients, except the lettuce.  Mix well, then pour over the shrimp/mushroom mixture, again mixing lightly.  Cover with plastic kitchen wrap and marinate in the refrigerator for at least 6 hours, but can be up to 24 hours, turning the mixture often during the period.  Serve in a large serving bowl with the fresh lettuce leaves around the edge.  Serve with kitchen picks as hors d’oeuvres.  Great, really great for a good-size gathering.  Enjoy!
